Here is a fun (and super delicious) new recipe ive been making alot of lately...
Its all the fixings of a Loaded Baked Potato...but in the form of a Grilled Cheese Sandwich!
Its not only different and unique but its super-cheap to make (all the ingredients cost me about $12 at the supermarket and was enough for about 8 sandwiches)
LOADED BAKED POTATO GRILLED CHEESE

INGREDIENTS
1 tablespoon vegetable oil
2 slices of potato bread
2 tablespoons butter
2 slices sharp cheddar cheese
2 tablespoons sour cream
2 tablespoons of cooked crumbled bacon
1 tablespoon of sliced or chopped scallions
sprinkle of salt & pepper
1/2 cup of regular potato chips (not potato crisps as they are too flimsy & not kettle chips as they are too hard)
DIRECTIONS
heat vegetable oil over frying pan in low-medium heat
spread the outside of the bread slices with butter. it works best when the butter is soft and easy to spread over the whole slice. sometimes i'll use country crock or margarine tubs as those tend to be easier to spread without ruining the bread.
put the buttered-side slices face down in the oil in the pan. put a slice of cheese on the top of each slice while it is cooking.
cook until the buttered-side is toasted (its good to check the progress a few times with a spatula so you dont burn the bread)
remove the grilled bread w/ cheese to a countertop, plate or cutting board & spread sour cream over the cheese on both slices.
sprinkle one slice with bacon and the other slice with scallions
carefully arrange the potato chips on both slices (note that the flattest style of chips work the best here. chips that are curled up or bulky arent as effective)
season the chips with salt & pepper and put both slices together to make a full sandwich. cut the sandwich in half if you desire.
